The distillery specialises in crafting unique gins using native NT botanicals, while the menu, curated by expert chefs, highlights the region’s distinctive local ingredients.  There are multiple event spaces, including a restaurant and alfresco terrace.

Located within Charlie’s of Darwin, Darwin Distilling Co. offers immersive gin-blending classes, where guests can create their own bespoke NT gin using rare and locally sourced botanicals.

Heli-Foraging

An exclusive collaboration between Darwin Distilling Co., Nautilus Aviation and Finniss River Lodge, this high-end, small-group adventure combines heli-foraging with gin-making for an unforgettable experience.

Guests embark on a breathtaking 30-minute helicopter flight over the Northern Territory’s rugged landscapes before arriving at Finniss River Lodge—a 50,000-acre outback cattle station and luxury retreat. From there, they board an all-terrain buggy or airboat to forage for native botanicals such as quinine, ti-tree, turkey bush, paperbark, and water lily.

Back in Darwin at Darwin Distilling Co., participants explore and experiment with these hand-picked botanicals to craft their very own signature gin, capturing the true essence of the Territory.
